The Days of Our Lives: Ellie Marin, Cornutopia

In The Days of Our Lives we meet some fascinating and creative folk and take a look at what their typical day holds. Far from being about the mundane, it is a celebration of what it takes to juggle the day-to-day with big ideas, a successful business and a gloriously full home life. It’s about keeping all the balls in the air – what is important and what isn’t. It’s about (extra)ordinary moments that fill our every day.

This week, let me introduce you to Ellie Marin. She’s the live wire (aka head ‘corn’) at Cornutopia – a food truck serving up tacos and sweet corn at Preston Market and across the streets of Melbourne.

If you fancy trying Cornutopia’s authentic brand of Mexican street style food, make sure you drop by Barkly Square this Sunday from 11 am – 2 pm. You can have one of Ellie’s muchos tasty tacos and even meet the lovely lass herself!


6:00 am

Wake up rug up and head to the garden, it’s still dark out, while I do my half hour morning meditation


6:30 am

Shower and dress for the day.


7:00 am

Eat my delicious breakfast with a cup of tea and look over my diary.


7:30 am

Arrive at the Preston Market say my ‘good mornings’ while collecting fresh fruit, veggies and all the produce for the day.


8:00 am

Start food prep in the van with Cassie. We get our hands nice and dirty chopping, grilling, shredding and squeezing our seasonal ingredients


9:00 am

Put out our specials board and open the van for breakfast.



12:00 pm

A busy lunch, serving our robust, eco-friendly, authentic Mexican street food all the while chatting to customers and friends alike.


2.00 pm

Enjoy a couple of hardy veggie tacos and a side of sweet corn outside.


2.30 pm

A client drops by for a tasting and we finalise the menu for an upcoming event (such as this weekend’s Food Truck Event at Barkly Square).



3.30 pm

Read my mail, emails, social media updates and return phone messages while sipping peppermint tea.


5.00 pm

Re-join the Cornutopia team, we chat while preparing for the dinner rush.


7.00 pm

Arrive home.


7.30 pm

Create dinner with my partner Kyle.


8:30 pm

After dinner we go for a walk and drop in on close by friends.


9.30 pm

Back on the internet to check tomorrow’s weather and glance my emails.


10:00 pm

Bed with my book.


10:30 pm

Sleep comes.
