Breakfast of Champions

After Eat Fit Food gave me a massive kick up the arse, I’ve made a few changes to my diet and lost almost five kilos over three months. One of the biggest, and easiest changes, I made was to my breakfast. I find that when I get brekky right, I make better choices for the rest of the day.

So, what’s on the menu? Well I’ve been making my own muesli and adding some pureed apple and rhubarb plus full fat biodyanmic yogurt. By spending 15 minutes in the kitchen on Sunday, I get organised and make sure I start each morning right.

 

HEALTHY-BUT-YUMMY MUESLI

This recipe is inspired by Sarah Wilson’s tasty Coco-Nutty Granola from her I Quit Sugar CookBook.

What you need:

What you do:

  • Preheat oven to 120 C.
  • Mix all ingredients in a bowl, spread evenly on baking paper on a tray and bake for 15 minutes.
  • Turn muesli over and cook for another 15 minutes until golden.
  • Remove from oven and allow to cool completely before putting in an airtight container.

 

PUREED APPLE AND RHUBARB

Rhubarb is a vegetable that is an excellent source of Vitamin C, which is important to help support a healthy immune system. It is also high in dietary fiber which assists  the digestive system, and is a good source of calcium.

What you need:

  • 1 x bunch of rhubarb
  • 2 x apples

What you do:

  • Remove all leaves from the rhubarb as they are poisonous. Cut off the flat brown part from the bottom of the stalk.
  • String the rhubarb only if the stalks are very large and green.
  • Cut the stalks into 3 cm lengths.
  • Core and slice apples. I leave the skin on so I don’t miss out on its antioxidant benefits, but if you prefer, you can always peel the apples.
  • Put the prepared apple and rhubarb into a heavy-based, enamelled cast-iron saucepan with a couple of spoonfuls of water. Cover tightly with a lid.
  • Stand the saucepan over a medium heat for about 5 minutes then lift lid and stir.
  • Let it cook for a few more minutes until it’s a soft puree.
  • Blend mixture in a food processor until it’s smooth.
