On Thursday, Australia’s Biggest Morning Tea will take place. Not simply an excuse to get together over a cuppa, this event is also a fundraiser for the Cancer Council. To get involved, you can host your own morning tea, attend someone else’s, or donate online.
To get into the swing of things, I thought we could share our sweet treat recipes. Here’s one for Raspberry and White Chocolate Muffins which are a bit of a fave in our household. You can add yours to the link list below – it doesn’t need to be a new post, it might be a recipe you shared on your blog ages ago.
Raspberry and White Chocolate Muffins
2 cups self-raising flour
2/3 cup castor sugar
2/3 cup finely chopped white chocolate
1 egg
3/4 cup buttermilk
125g unsalted butter – melted
1 teaspoon vanilla extract
1 cup raspberries, plus a few more to decorate with!
Preheat oven at 180 degrees and grease 12-hole muffin pan.
Combine flour, sugar and chocolate in one bowl.
Combine egg, buttermilk, butter, vanilla extract and raspberries in a seperate bowl.
Make a well in the centre of the dry ingredients pour in wet ingredeitns. Mix lightly, being careful not over mix.
Spoon batter into tins until two-thirds full and pop an extra raspberry or two on top of each muffin.
Bake for about 20 minutes, or until browned on top.
Cool for a minute before turning muffins out onto a wire rack to cool completely.
