My kids are mad about blueberries. They love blueberry smoothies, blueberry pancakes and blueberries straight from the punnet. So, when The Health Mummy shared with me a super tasty recipe for Apple and Blueberry Loaf, I knew I’d get extra brownie points from the rug rats. Little do they realise it’s also refined sugar and dairy free!
Apple and Blueberry Loaf Recipe
Serves 12-15
Ingredients
- 2 apples
- 1 cup blueberries
- 3 eggs
- 1/4 cup coconut or olive oil
- 1 tbsp chia seeds
- 2 tsp baking powder
- 1/4 cup walnuts
- 2 tsp cinnamon
- 1 tsp allspice
- 1 tsp vanilla extract
- 1 1/2 cups wholemeal flour
- 1 cup almond meal
Method
- Preheat oven to 180 c.
- Peel and grate apples. Put into a large mixing bowl with blueberries, eggs, oil, chia seeds, baking powder, walnuts, cinnamon, allspice and vanilla. Mix well to combine.
- Add flour and almond meal and gently combine. You want quite a thick, dense batter, so don’t over mix.
- Line a loaf with greaseproof paper.
- Spoon batter into the tin and bake for 45-55 minutes until the top of the loaf turns golden and a skewer inserted in the centre come out clean.
