Healthy Chocolate Donut Recipe

Normally when I get a new cookbook, I bookmark a few recipes to try. But when I read The SuperFoods Kitchen, I literally tagged every flippin’ page!

The SuperFoods Kitchen contains more than 70 recipes from 20 of the best home cooks across Australia and caters for all eating requirements including gluten free, dairy free, nut free and vegan alternatives. In fact, hundreds of recipes were submitted to a judging panel of nutritionists and naturopaths who were brought together by Bioglan to choose the very best of the best. The end result is a creative and passionate cookbook which celebrates supercharged food that tastes good and is good for you.

To give you a taste (sorry, I couldn’t help myself!) of The SuperFoods Kitchen, I wanted to share with you this healthy Chocolate Donut recipe which was created by 15 year old, Isobel Nicholls.

Doughnut Ingredients:

  • 1 tablespoon Bioglan Chia Seeds
  • 1/4 cup (60ml) water
  • 1/2 cup (90g) buckwheat flour
  • 1/2 cup (60g) almond meal
  • 1 tablespoon Bioglan Cacao Powder
  • 1 teaspoon baking powder
  • 1 tablespoon Bioglan Coconut Oil, melted
  • 1 cup (250ml) almond milk
  • 1 tablespoon rice malt syrup
  • 1/2 banana, mashed

Cacao Frosting Ingredients:

  • 1/2 avocado
  • 2 tablespoons rice malt syrup
  • 1 tablespoon Bioglan Cacao Powder
  • 1 tablespoon almond milk, approximately

  1. Preheat the oven to 180°C (Gas 4). Grease a mini doughnut tray.
  1. Soak the chia seeds in the water for 5 minutes.
  1. Combine all the dry ingredients in a bowl.
  1. Combine the soaked chia seeds with the wet ingredients, then mix into the dry ingredients.
  1. Spoon the mixture into the doughnut tray so that the holes are about three-quarters full. Bake for 10–12 minutes or until the doughnuts are golden brown and cooked when tested by inserting a skewer into the thickest part. Cool completely on a wire rack.
  1. To make the frosting, blend all the ingredients in a high-powered blender until smooth, adding the almond milk until the mixture reaches a spreadable consistency. Spoon the frosting into a small bowl.
  1. Dip the cold doughnuts into the frosting, twisting as you lift them out

You can cook the doughnuts using a mini doughnut machine. Turn it on to heat up before you start preparing the doughnut mixture. The doughnuts will only need to cook for 4–5 minutes.
